Quick Chicken Curry

Serves:  4
Ingredients
250g greek yoghurt
1 Red Capsicum sliced
1 brown onion sliced
2 tsp curry powder
500g chicken thigh cut into 2cm pieces
8 mint leaves finely chopped
1 tblsp olive oil
salt and pepper to taste

Method

  1. In a medium pan, add curry powder and place capsicum and onion on a medium heat until onion is translucent
  2. Add chicken, salt and pepper, sitrring constantly until cooked. about 6 minutes
  3. Add yogurt, wait till hot, but not boiling. 
  4. Add mint and stir
  5. Serve with bread.
