Ingredients
90g unsalted butter
2 egg yolks
1 tablespoon water
1 tablespoon freshly squeezed lemon juice
Method
1. Put butter into a shallow, microwave-safe bowl. Microwave on high for 30 to 45 seconds or until melted.
2. Remove from microwave. Add egg yolks, water and lemon juice. Beat well using a whisk.
3. Microwave on defrost settings for 20 seconds. Remove from microwave and whisk well.
4. Reset the microwave to defrost and cook the sauce for about 30 seconds,opening the door to whisk the sauce every 10 seconds.
5. Remove sauce from the microwave and whisk briskly until thick and smooth. Microwave for a further 15 seconds if the sauce seems too thin.
