Serves 4
Ingredients
50g Butter
2 Tbsp Olive Oil
3 Garlic Cloves, finely chopped
1 Onion, finely chopped
250g mushroom, roughly chopped
250g Oyster Mushrooms, roughly chopped
500g Chicken Thigh, 2cm pieces
1 tsp Fish Sauce
1 tsp salt
1 tsp white pepper
2 tsp All Purpose Spice
1/2 Pack of Dried Angel Hair Pasta
Method
1. In a bowl, combine salt, fish sauce and pepper with the chicken. set aside for 10 minutes
2. Brown chicken over medium heat, set aside - about 4 minutes
3. Sweat onions until translucent
4. Add Garlic and butter and cook for 2 minutes
5. Add Mushrooms and cook for about 4 minutes - until brown
6. Return Chicken with juices and cook for another 6 minutes
7. Cook pasta according to packet instructions.
8. Place pasta on plate, top with Chicken and Mushroom, spoon over sauce. Serve with Cracked Pepper and Parmesan Cheese
